One sea bass

This is a single sea bass of exceptional freshness, hand-selected at dawn by wholesalers at Toyosu Market.

The sea bass is from Mie or Chiba (approx. 50cm, approx. 1.5kg). It has translucent white flesh that becomes particularly fatty in the summer. It is perfect for "arai" sashimi chilled in ice water, pan-searing, salt-grilling, or meunière.
