This is a filefish (approx. 20cm) from Mie or Shizuoka. Its greatest appeal lies in its elegant white flesh, which rivals pufferfish, and its rich, creamy liver. It is exquisite served as sashimi dressed with its liver dissolved in soy sauce, or simmered.
