A cutlassfish (approx. 50cm, 500g) from Kanagawa or Chiba. Despite its white flesh, it is rich in fat; lightly searing the skin for sashimi reveals an exquisite sweetness. It also turns out succulent when grilled with salt, prepared as meunière, or simmered.
