This is a premium, line-caught bonito from the waters off Sanriku (a whole 40cm, approx. 3kg fish). Its flesh is firm, light, and healthy. It is best enjoyed as tataki, with the skin lightly seared, served with plenty of aromatics, ginger soy sauce, or ponzu.
