A whole, incredibly fresh wild flounder, hand-selected by Toyosu Market wholesalers in the early morning.

Wild flounder from Aomori or Chiba (one whole fish, approx. 30cm). Only wild-caught fish offer such firm, sweet white meat and the distinct, crunchy texture of the fin muscle. Perfect for thinly sliced sashimi, meunière, or simmered dishes.
