A whole, incredibly fresh yellowtail amberjack (hiramasa) hand-picked by Toyosu Market wholesalers in the early morning.

This high-quality yellowtail amberjack is sourced from Nagasaki (one whole fish, approx. 3–4kg). Known as the "king of blue-backed fish," its fat is more refined and its flesh firmer than that of Japanese amberjack (buri). Enjoy it as beautiful, translucent sashimi or in shabu-shabu.
